I’ve had a few song parodies sitting around for about a month or two now, unable to do anything with them because I have no idea what we are capable of doing at this station.
Do we have a way to take a song and separate the lyrics from the instrumentals, and then put our own lyrics overtop of the instrumentals?
In fact, it doesn’t even matter if we can put our own lyrics overtop. I can jimmy rig something that will work just as fine, but I need to be able to separate the original lyrics from the instruments.

Technically speaking, the way the "pros" do it is by acquiring the master tracks (one track vocals, one track instrumentals) and just replacing the vocal track with their own.
Several artists release both instrumental and acapella versions of their albums for such a purpose.
If they can't be obtained, many will just record a cover version of the song or (if you're REALLY desperate) find a MIDI instrumental (think Casio pianos).
A last resort would be to use software with "karaoke" or "vocal reduction" filters that lower or mute a range of sound in the song. However, you'll still be able to hear echo-y vocals and/or experience total loss of certain instruments/sound effects in the song.
In short, it's doable, but not easy.

Actually, I'm having trouble finding the instrumentals to some of the songs on youtube. Could you tell me where to get the software, or if one of the computers in the room has it already?
